The Challenge  

The challenge focuses on developing innovative AI- and ML-driven approaches to improve ice cream processing and formulation. It seeks:

• Solutions that incorporate hybrid simulation and ingredient interaction modeling
• Solutions adaptable to different manufacturing conditions and ingredient formulations
• Models that include consumer sensory prediction to forecast taste and texture preferences

The goal is to enable reliable, AI-based formulation and processing for ice cream, accelerating innovation while ensuring product quality, efficiency, and consistency.

Reward

Successful applicants can receive proposal-dependent sponsored research funding to support proof-of-concept projects, including access to General Mills’ technical experts, data, and R&D facilities, with the potential for ongoing collaboration and long-term partnership development.
